I know how busy all us women are; especially mom’s. We have to get the kids off to school in the morning with a good breakfast, make meals for our families and keep the house clean. (And that’s just for starters!) Because, nowadays, if you’re a modern woman, you’re probably holding down a full or part-time job as well. So what do you do on those mornings when there’s only enough time for you to get your kids off to school, but no time to feed yourself? Well, this might be part of the solution. These also are great to take if you’re going out for a long walk or bike ride, and provide just the burst of protein and energy you need to go that extra mile.

Makes: 3 dozen bites
Ingredients:

3/4 cup pecans

1/2 cup ground flaxseed

1/2 t cinnamon
-
4 T shredded sweetened (or unsweetened) coconut
-
1/2 cup smooth peanut butter
-
2 1/2 cups old fashioned oats
-
1 T coconut oil
-
1/3 cup honey
-
1/8 cup maple syrup
-
1 t pure vanilla extract
-
1/2 cup mini chocolate chips (dark or semi-sweet)

1/4 t salt
Instructions:

In a food processor, grind pecans to a medium grind. Add flaxseed and process for 30 seconds.

Add cinnamon, coconut, peanut butter, oats, coconut oil, honey, maple syrup and vanilla extract. Process for another 30 seconds.

Place mixture, covered, in refrigerator for 30 minutes.

When ready to roll, or spread, remove from refrigerator, and add the mini chocolate chips and salt.

Mix well to incorporate these ingredients.

Roll by hand into 1 inch balls and arrange these on a cookie sheet or serving dish. (*If you find mixture getting sticky, either put some coconut oil on your hands to help release, or return mixture to the refrigerator for 5 minutes.)

If you wants bars, spread mixture into a 8 X 8 pan, refrigerate, then cut into bars.
