Light and Lively Butternut Squash Salad

This salad is like looking at sunshine on a plate! (Which is so nice to see when it’s cold and winter-dark out!) Crispy and crunchy, this salad busts with natural sweetness from the apple, oranges and honey.  If you have a food processor, this salad is fun, easy and quick to make. But even if you don’t, grating the carrots, squash and apple should only take 10 to 15 minutes. I must warn you, this recipe makes a large quantity of salad! Happily, it will keep a week in your refrigerator. Delish!

Diff:  Intermediate       Prep:  10-20 min.      Serves:  12

 

Ingredients

  • 1 butternut squash

  • 2 medium carrots

  • 1 medium apple

  • 3 oranges

  • ½ cup dried cranberries or raisins

  • 2 T. honey

  • 3 T light olive oil or other light flavored oil

  • Dash of salt

Instructions

  • Peel the butternut squash. Cut squash in half and scoop out the pulp and seeds. Using a food processor or grater, grate the squash. Transfer to a medium bowl.

  • Wash and peel the carrots and apple. Grate these and add to bowl.

  • Peel two oranges and cut into small pieces, add to bowl.

  • Add dried cranberries or raisins to bowl.

  • Juice the last orange and put this in a small bowl.

  • Add honey and oil to small bowl and whisk ingredients until well combined.

  • Drizzle over the squash mixture and toss lightly to coat, then serve.

Now, really, doesn’t that look like sunshine?  And the crunchy texture can’t be beat!  Another thing I love about this salad is that you can make it ahead of time, and then refrigerate it until you need it.  This Butternut Squash Salad is so delicious, I’ll be making up a batch just to put into my morning smoothies! It’s also a great dish to make and take to a holiday potluck; or for when you’re trying to lose weight (which is something I know a lot of us ladies think about after the holidays!)

  1. Mmmm….I’m going to make this…even if no one else in my house will eat it! There seems to be a vegetable revolt lately…..but I shall eat on !! Thanks for the new idea
