Here’s a quick and easy recipe for a party or potluck dish featuring, you know it, one of my favorite kitchen tools; the slow cooker. All you do is put the chicken thighs (love that dark meat!), into your slow cooker, add a few ingredients that makes a delicious, smoky sauce, and turn it on and forget it for 6+ hours; giving you lots of time to do everything else! I first made this for a guest and husband to tide them over while I was away for several days; and I was gratified that they both loved it. Easy and yummy, you gotta love it!

Ingredients:

8 skinless, boneless chicken thighs

1 cup soy sauce

1 cup ketchup

2/3 cup honey
-
6 cloves garlic, minced

2 teaspoons dried basil or 1/4 cup fresh basil, chopped finely
Instructions:

Place chicken thighs into the bottom of an 8-10 quart slow cooker.

Mix soy sauce, ketchup, honey, garlic, and basil together in a bowl; pour over chicken.

Cover and cook on low for 6 hours.

Serve chicken over noodles or rice.
I hope you enjoy this smoky, mahogany colored chicken. This should be a big hit at a summer potluck or picnic. Just be sure to pack some napkins as this makes a lot of sauce!
