Healthy Kale Avocado Salad

This salad  was inspired by one I saw on Joy the Baker’s website last December.  It is a simple salad kissed with a honeyed sesame oil, soy sauce dressing that soothed both the stomach and senses; a salad to bring the body back to balance.  Fortified by two superfoods, kale and avocado; the kale’s robustness is tempered by the creaminess of avocado and the sweet tang of oranges. Full of vitamins and anti-oxidants, this powerhouse of a salad is totally delicious!  Make enough for your entire family, they’ll thank you for it!

Diff:  Easy     Time:  20 min     Serves:  2 large or 4 small

Tip:  After washing kale, massage it well with your hands, which will make it softer.

Ingredients:

  • 3 heaping cups clean and well-chopped kale

  • 1/2 T olive oil

  • pinch of salt

  • 3 heaping cups clean and well-chopped romaine lettuce

  • 2 oranges, peeled and divided into segments

  • 1 large avocado, peeled and sliced

  • 1 1/2 T sesame seeds, toasted

  • 3 T rice wine vinegar

  • 2 T sesame oil

  • 1 T soy sauce

  • 1 t honey

  • fresh cracked black pepper, to taste

  • coarse sea or celtic salt, to taste

Instructions:

  • In a small skillet, toast sesame seeds over medium heat until slightly golden, about 3-5 minutes.  Remove to a clean plate to cool.

  • Place clean kale in a large bowl and drizzle with olive oil and a pinch of salt.  Massage the oil and salt into the kale.

  • Add the romaine, orange segments, and avocado slices to the bowl.

  • Sprinkle with the toasted sesame seeds.

  • In a small jar with a tight-fitting lid, combine the vinegar, sesame oil, soy sauce, honey, and pepper.  Place lid on jar and shake well until well mixed.

  • Drizzle the dressing over the greens, oranges, and avocados.  Toss to combine.  Sprinkle with salt and pepper.  Serve and enjoy!
