This salad was inspired by one I saw on Joy the Baker’s website last December. It is a simple salad kissed with a honeyed sesame oil, soy sauce dressing that soothed both the stomach and senses; a salad to bring the body back to balance. Fortified by two superfoods, kale and avocado; the kale’s robustness is tempered by the creaminess of avocado and the sweet tang of oranges. Full of vitamins and anti-oxidants, this powerhouse of a salad is totally delicious! Make enough for your entire family, they’ll thank you for it!

Tip: After washing kale, massage it well with your hands, which will make it softer.
Ingredients:

3 heaping cups clean and well-chopped kale

1/2 T olive oil

pinch of salt

3 heaping cups clean and well-chopped romaine lettuce

2 oranges, peeled and divided into segments

1 large avocado, peeled and sliced

1 1/2 T sesame seeds, toasted
-
3 T rice wine vinegar
-
2 T sesame oil
-
1 T soy sauce
-
1 t honey
-
fresh cracked black pepper, to taste

coarse sea or celtic salt, to taste
Instructions:

In a small skillet, toast sesame seeds over medium heat until slightly golden, about 3-5 minutes. Remove to a clean plate to cool.

Place clean kale in a large bowl and drizzle with olive oil and a pinch of salt. Massage the oil and salt into the kale.

Add the romaine, orange segments, and avocado slices to the bowl.

Sprinkle with the toasted sesame seeds.

In a small jar with a tight-fitting lid, combine the vinegar, sesame oil, soy sauce, honey, and pepper. Place lid on jar and shake well until well mixed.

Drizzle the dressing over the greens, oranges, and avocados. Toss to combine. Sprinkle with salt and pepper. Serve and enjoy!
