Baked Spicy Sweet Potato Fries

Sweet Potatoes are one of my favorite vegetables, I love them roasted, grilled, baked into muffins, pie or bread, and I absolutely adore sweet potato fries. But who needs the oil or the calories of deep fried regular or sweet potato fries? Not me! So, baked fries to the rescue! I’ve experimented over the years with different oven temperatures and thicknesses of fries, and have finally hit upon what I think is the best formula. Cutting the fries thin, but not too thin, and using the minimal amount of oil appears to give the crispest results. However, do check the fries every 10-15 minutes to make sure they are not sticking or burning!

Cook: 60-75 min     Serves: 2-4

 

Ingredients:

 

  • 2 large sweet potatoes, peeled

  • 1-2 T extra virgin olive oil

  • Chili Lime Spice (Pampered Chef)

  • Garlic Powder

 

Instructions:

 

  • Cut peeled sweet potatoes into matchsticks about ¼ inch thick

  • Place on a large, unoiled sheet pan

  • Pour 1 T oil on potatoes, and rub oil into each matchstick until each one is lightly coated with oil; add additional 1 T oil if needed

  • Spice liberally with Chili Lime and Garlic Powder

  • Make sure fries do not touch each other for best crisping

  • Bake at 425° F for 30 minutes, then turn over fries with a spatula

  • Bake another 30 minutes, check, and if needed, bake for another 5-15 minutes to desired crispness

 

Enjoy! These are delicious, but try not to eat all of them by yourself in one sitting! I did, but they were oh so good!
