In the Pink Raspberry Banana Smoothie with Swirled Cinnamon

As the days march into April, the weather is finally warming, giving me hope that winter’s grip is finally loosening. One sunny morning I made this nutritious and prettily pink smoothie to celebrate the sunshine. Easy and quick, you just toss most of the ingredients into a blender and process until smooth. Garnish with a sprinkle of swirled cinnamon, and add small pieces of raspberry for a pretty finish.

 

This good for you smoothie includes Greek yogurt full of protein, fiber-filled ground flaxseed, and ginger with it’s anti-inflammatory properties. The raspberries are full of anti-oxidants and Vitamin C, and  the banana contributes Vitamin B6, potassium, and creaminess.  It’s all topped by a swirl of cinnamon and jeweled raspberries. 

So celebrate spring and Easter with this colorful drink that is reminiscent of tender spring flowers!

Process: 10-30 seconds Serves: 1-2

 

Ingredients

 

  • ½ cup fresh, washed raspberries + 2 berries for garnish

  • 1 5.3 oz Raspberry Greek yogurt, 100 calories (Yoplait)

  • 1 banana, fresh or frozen, chopped in pieces

  • 1/8 cup ground flaxseed

  • ½ inch piece ginger

  • 2 ice cubes or 1/4 cup cold filtered water

  • pinch of cinnamon

 

Instructions

 

  • Toss all ingredients in blender, process until smooth

  • Pour into tall glass, sprinkle with cinnamon and swirl

  • If desired, break up one or two raspberries into small pieces and garnish smoothie(s)

  • Enjoy!

 

This makes a great quick, grab and go breakfast, refreshing snack or delicious dessert!
