It’s cold and it’s February; and I don’t know about you, but I need a little something to look forward to. No, I’m not talking about a cruise or a flight to somewhere warm (though that would be nice!), but something sweet, creamy and chocolate to eat as a reward for sticking to my New Year’s resolutions. Now, this little treat couldn’t be easier; you make it in a mug, and cook it in the microwave. How hard it that? So, indulge and make one for yourself! And with Valentine’s Day on the horizon, why not just double the recipe for you and your special person?
Diff: Very easy Prep: 10 min Cook: 2 min Yield: 1
Ingredients:

4 T all purpose flour

4 T white sugar

1/2 t baking powder

1 egg
-
2 1/2 T unsweetened cocoa powder

3 1/2 T milk

dash (2-5 drops) of vanilla extract

3 1/2 T oil (canola, vegetable or sunflower)

1 1/2 T caramel (ice cream topping) or 2 soft caramels
Directions:

Combine all ingredients except caramel in an oversized coffee mug.

Whisk well with a fork until smooth.

Microwave on high for 50 seconds. (Cake should be somewhat solid but still liquidy.)

Remove cup from microwave and add caramel sauce or caramels to the center of cake. Push these down slightly so batter just covers the caramel.)

Microwave for an additional 40 seconds and check to see if batter is done. If still gooey, cook for an additional 30 seconds.

Remove and cool for a few minutes before serving warm.
Of course, if you want even more of a major yum, feel free to top this delicious mug cake with whipped cream, chocolate shavings or chopped nuts! Enjoy!
