Watermelon Arugula Caprice Salad


The end of Summer is a great time to enjoy all the fresh flavors of the season before they are only a memory!

Watermelon Arugula Caprice Salad

Half of a watermelon cut into bite size pieces
2 to 3 Tomatoes sliced, I used heirloom yellow and red
1 small log of Fresh Mozzarella sliced
Handful of fresh Basil leaves minced, save one sprig for garnish
3 cups of fresh Arugula leaves, I used baby organic
Fresh ground black Pepper
Fresh ground Pink Himalayan Sea Salt
Virgin Olive Oil
Pomegranate Vinegar

Combine the watermelon, tomatoes, mozzarella , basil, arugula , salt and pepper in a large shallow bowl. Lightly toss. Drizzle with Olive oil and Vinegar.
