Refreshing Minty Pink Grapefruit Cooler

We’ve had a week of hot sultry weather here in Southeast Michigan; and it’s times like these that one really appreciates a tasty, cooling drink! So, I was delighted when I came across this recipe for a Pink Grapefruit Cooler online. This is very simple to make, has gorgeous color, a tarty sweet taste spiked up with mint, and is absolutely delicious! This has been my go-to cocktail this summer, and I can’t think of a more refreshing drink to offer at an end of the summer party during Labor Day weekend.  I thank the Lord God that he created grapefruit and mint!  What a wonderful combination!

 

I am including both a mocktail and cocktail version of this below.

 

Refreshing Minty Pink Grapefruit Cooler

Diff: Easy   Prep: 5 minutes

Time: 5 minutes    Serves: 4-6

 

Ingredients

 

2 cups Ruby Red 100 % Grapefruit Juice

1 cup Sugar*

1 cup Water*

1 Lime, zest and juice

1 cup Fresh Mint Leaves, reserve some for garnish

1 Large Ruby Grapefruit, peeled and separated into segments or slices

1 Large Bottle of Lemon Lime Soda of your choice

 ** I found this syrup to be too sweet, so I only used 1/2 cup sugar to 1 cup water

Instructions

 

For grapefruit simple syrup - in a 4 cup saucepan, add grapefruit juice, sugar, lime juice and zest. Bring to a boil and cook until sugar is melted. Remove and let cool.

 

To serve, in a glass, muddle some mint leaves and grapefruit segments with some of the grapefruit simple syrup. Add ice, (Oops, I guess I forgot to do this!) then top off with your choice of lemon lime soda. Stir to mix and garnish with some mint leaves and a slice of grapefruit.

 

Pink Grapefruit Mojito

 

Ingredients are the same as above except add a total of 2 cups of white rum.

 

Instructions are same as above except, after adding ice and grapefruit simple syrup, add ¼ - 1/3 cup rum per glass.

 

I have also made this in quantity in a pitcher, muddling most of the mint and grapefruit in the bottom of the pitcher (except what you will use for garnish) and adding all the ingredients at once. Then you can just pour into individual glasses, garnish and enjoy!
