Triple Berry Trifle

These are all words that I associate with summer. When it is hot and humid, the last thing you want to do is cook. Here is a great idea for the family tonight - Have a cook out!

Grill some chicken or burgers

shred yourself a fresh coleslaw with your favorite dressing and raw veggies from the fridge

And for heavens sake - make a light creamy and cool dessert like this triple berry trifle!

There are only a few ingredients and it is a breeze to assemble

  • 1 Angel-food cake (cut up into small squares)
  • 1 pint blueberries
  • 1 pint blackberries or raspberries (whichever look better at the store….or your garden!)
  • 1 quart strawberries - washed and cut in half
  • 1 pint heavy whipping cream (or a can of ready whip if you are feeling extra lazy :)

~ Mix the berries together in a bowl and let them sit while you are whipping the cream. Don’t over-whip it or it will get clumpy….we want to keep it light. Then, all you do to assemble is layer the ingredients from each of the three bowls into a trifle bowl (or a large glass bowl so you can see the layers- they are so pretty!) Keep it in the fridge till you are ready to eat, then spoon it up!  Yum!

It is easy to have several helpings of this since it is so light, so be careful!!

This would make a really great 4th of July dessert to take to a party, and they will love you for it!
