Sweet and Sour Red Cabbage with Bacon



Sweet and Sour Red Cabbage with Bacon is a great hearty winter dish.  This version has only six main ingredients, making it super easy to make and cooks in  a half hour. It’s a great use of red cabbage, a vegetable that has tons of vitamins and is so good for you. Sweet and Sour Red Cabbage with Bacon (yum!) is great with roast pork, sausages or pork schnitzel. The bacon adds a smoky flavor to the cabbage that can’t be beat. A great alternative to sauerkraut, this colorful dish will look lovely on your table!

Ingredients

  • 1 head red cabbage, thinly sliced

  • 2 cups red onion, finely chopped

  • 1/2 Lb bacon, cut into 1/2 inch strips

  • 2 Granny Smith Apples, cored and cut into 1/2 inch pieces

  • 1/2 cup apple cider vinegar

  • 1/2 cup sugar (can be half white and half brown sugar)

  • Salt to taste

  • Pepper to taste

Instructions

  • Saute bacon until almost crisp and all the fat has rendered.

  • Saute onion and apple in bacon and fat until apples are slightly soft and onions are almost translucent.

  • Add apple cider vinegar and sugar(s) and stir to combine.

  • Cover and cook over medium low heat until cabbage is tender (about 20 minutes). Add a small amount of water if needed.

  • Season with salt and pepper according to taste.

  • Serve hot and enjoy!

Yes, this is kind of a “dump” recipe. I have seen other red cabbage recipes where you fry up the bacon until crisp, and remove it. And you’re welcome to do that here as well, just as long as you add it back before serving! OK? OK.
