This is a new recipe I’m trying for the first time this year for the Christmas holidays. If you enjoy coffee and dark chocolate, you are in for a real treat! These crisp cappuccino cookies are dunked into smooth, melted dark chocolate. I was really impressed at how delicious they turned out. Fun to make and fun to eat, these unusual and lightly sweet cookies should be a hit at your next get together!

Cappuccino Cookies Dipped in Dark Chocolate
Diff: Medium Prep: 35 minutes + 4 hr. refrigeration
Cook: 10-12 minutes Makes: 3-4 dozen
Ingredients

½ cup butter, softened

½ cup shortening
-
½ cup sugar
-
½ cup packed brown sugar
-
1 tablespoon instant coffee granules
-
1 teaspoon warm water
-
1 egg
-
2 squares, (1 ounce each) dark chocolate,
melted and cooled

2 cups all-purpose flour
-
1 teaspoon ground Vietnamese cinnamon

¼ teaspoon salt

1 ½ cups dark chocolate chips or chunks

3 tablespoons shortening
Directions

In a mixing bowl, cream together butter, shortening and both sugars.

Dissolve coffee into water; add to creamed mixture along with the egg and melted chocolate. Mix well.

Combine flour, Vietnamese cinnamon and salt and add gradually to creamed mixture. Dough will be sticky.

Shape into two 6½ inch rolls; wrapping each tightly with plastic wrap.

Refrigerate for four hours or until firm.

Taking one roll out of the refrigerator at a time, unwrap and cut into ¼ inch slices.

Place cookie slices 2 inches apart on ungreased baking sheets.

Bake at 350°F for 10 to 12 minutes or until firm to touch.

Remove cookies to wire racks to cool.

While cookies are cooling, melt the chocolate chips and shortening together in a double boiler or small saucepan over very low heat.

Working quickly, dunk each cookie halfway into melted chocolate, then either scrape (with a knife) or shake off the excess.

Place on waxed paper until hardened.

Store in layers divided by wax paper in a sealed container.
