Amish Baked Apple Oatmeal

Here’s a wonderfully hearty and delicious breakfast that would be great on Thanksgiving morning!  Warming, filling and utterly delicious; this will keep your guests happy until the turkey is ready!  One of the great things about this recipe is that it can be made ahead of time, and then just reheated in the morning!  Because Thanksgiving morning is extra busy, having something made in advance and all ready to go is truly a blessing!  

 

There are many wonderful versions of this recipe, but I found my favorite at Once Upon a Chef.com by Jennifer Segal. (I then modified the  recipe a bit to work with what I had in my pantry.)  You can find her original Amish Baked Oatmeal here.  I especially like her use of nuts, which makes this nicely crunchy! 

Ingredients

  • 2 cups old-fashioned rolled oats (not instant)

  • 1/2 cup light brown sugar

  • 1 cup walnuts or pecans, divided

  • ¾ cup dried cherries

  • 1 teaspoon baking powder

  • 2 teaspoons cinnamon

  • 1/2 teaspoon salt

  • 2 large eggs

  • 2 cups non-fat milk

  • 1 teaspoon real vanilla extract

  • 4 tablespoons unsalted butter, melted

  • 2 tart yet sweet baking apples, such as Honey Crisp, peeled and cut into 1/2-inch chunks (about 2 cups)

Instructions

 

  • Preheat the oven to 325°F. Grease an 8 or 9-inch baking dish with butter.

  • In a medium bowl, combine the oats, brown sugar, 1/2 cup of the nuts, dried cherries, baking powder, cinnamon and salt. Mix well.

  • In another bowl, beat eggs, then stir or whisk in the milk and vanilla until well combined.

  • Add the milk mixture to the oat mixture, add the melted butter, stir well until combined.

  • Scatter the apples evenly on the bottom of the prepared baking dish. Pour the oatmeal mixture over top and spread evenly. Sprinkle remaining 1/2 cup nuts on top.

  • Bake for 40-45 minutes, until the top is golden and the oats are set. Serve warm or at room temperature.
