Spring Easter Cake

Homemade cakes take some time, but the taste is unbeatable . The message, “you are special” that it sends to the recipient is priceless!

Spring Flower Cake.   

3 C cake flour
1 T baking powder
1/2 t salt
3/4 C unsalted butter, softened
2 C sugar
1 t vanilla extract
1 t almond extract
1 C milk
6  egg whites, at room temperature

White Mountain Frosting

1 C boiling water
2 1/4 C sugar
1 T light corn syrup
3 egg whites, at room temperature
1 t vanilla extract

Raspberry jam for between the layers of cake, slivered almonds, fresh berries ( blueberries or raspberries and strawberries).

Preheat oven to 375*. Grease and lightly flour two 9″ round cake pans. Set aside.
Sift together flour, baking powder and salt. Set aside. Cream the butter and 1 1/2 C sugar until fluffy. Mix in the vanilla and almond extracts. Add the dry mixture, alternating with the milk.
Whisk the egg whites until foamy, then start adding the remaining 1/2 C sugar, continue to beat until whites stand in stiff peaks. Fold whites into batter, with an over-under motion. Pour batter into prepared pans and bake for 35 min, or until cake tester comes out clean. Allow to cool slightly, then loosen edges and remove from the pans to cake rack, cool completely.

Icing: Combine the boiling water with 2 C of sugar and corn syrup in a large saucepan set over med. heat. Cook at a rolling boil until moisture reaches soft -ball stage (238* on candy thermometer).
Whisk egg whites until foamy, then start adding the remaining 1/4 C sugar. Continue whisking until whites stand in stiff peaks. Pour the syrup mixture into the beaten whites in a thin steady stream, beating till all incorporated .

To assemble cake: Place one cake layer on plate or cake stand, spread a thin layer of icing over the top, spoon a thin layer of raspberry jam on top of icing. Then top with second cake layer. Frost the entire cake. To decorate place berries in a polka dot pattern  all over the cake, use the slivered almonds to create petals around the berries ( lightly press down the berries and almond slices to stick into the icing). Line the base of the cake with sliced strawberries.

You can also do a boxed cake with buttercream frosting, if you don’t want to take the time to do it from scratch….
